I had no major problems with reception  on the Via de la Plata from Sevilla to Santiago. There were some blind spots but on the most isolated stretches I had reception. I've spoken to a few pilgrims who have walked from Granada and none mentioned lack of mobile coverage being a problem. Many rural places now also have WiiFi
