Everybody's comfort zone is different.  I've seen and traveled with
people who carried no sleeping bags but used what was available in the
Refugio's.  On the other hand I've seen pilgrims carrying 40 + lbs
including arctic level sleeping bags (in September)

I used two cotton sheets sewn together and they were fine. At San 
Anton, I wore a sweater to bed and that was fine too. Rick Steves sells 
heavy cotton sleep sheets at his web site for cheap. I think you can 
find him at ricksteves.com.
