Mollie,

I see the thumbnail definition of Celiac’s Disease is “persons who cannot 
tolerate a protein called gluten, which is found in wheat, rye, barley, and 
possibly oats.” That sounds like you want to avoid all things which were one 
a grain.

The answer to your question is “Yes, you can get salads and fruits on the 
Camino”.

Esalada Mixta (mixed salad) is very common throughout the whole of Spain. 
Caldo Gallego is a soup which varies a bit in content but will be available 
everywhere from O Cebreiro onwards.  You can probably live on Tortilla 
Española (potato omelet) and Tortilla Francesa (cheese or anything you want 
omelet) in the small bars along the Camino.

OK, here’s the catchy part with the language for your situation.
Fruits are referred to as “frutas”, pretty safe to remember.
Nuts are referred to as “frutos secos” or “dry fruits” in English.
Confusion of terms could be disastrous.
