For those interested in further research on this, I would recommend 2 books:

Rafael Heliodoro Valle. Santiago en America. Mexico: Santiago, 1946.
        An overview of Stgo's influence on customsm music, dances, games &
celebrations, iconography and history throughout Lat Am. Lists 150 towns in
the Americas named for the saint. 136 pp.

And the nearly impossible to find, but beautiful exhibition book of

Santiago e America: Mosteiro de San Martino Pinario/Santiago de Compostela,
1993. Sponsored also by the Xunta de Galicia and the Arzobispado de Stgo de
Comp.
        Many articles about specific countries, iconography, etc. Gorgeous pictures
of Americas contribution to Stgo iconography/art. Pictures of many of the
shields mentioned by Rosina. Plus a listing of c. 450 towns, mountains,
rivers, and other topographical items named for the saint throughout North,
Central and South America.
