[Gocamino] BAGGAGE TRANSFERS/hotels SARRIA TO SANTIAGO de compostello

If I use baggage transfers only, how do you call them each day to tell them
where to bring bags if you are not sure where you may stay that night?  And
which company would you recommend for this portion of walk? Also I do want
to stay in B&Bs or small hotels. Any suggestions? of your favorite places.
