You are correct.

The French rail system is cryptic and moderately convoluted for the North American mind.

There are quite a few Gares in Paris, you want the Montparnasse station.

Prices range from about $100 to $300 USD for your first leg, depending on the flex of the ticket and the comfort /luxury level you wish. Some are unchangeable, and are the least expensive. If you miss the train, your plain is late, etc, that ticket is worthless.

Allow all day .. perhaps two for the journey. It's about five hours from Paris to Bayonne, and about an hour and a half from Bayonne to St Jean. Make sure you will 1) make your connection, and 2) have a reservation waiting for you in St Jean. The French trains are pretty much on time, but if you miss your connection due to their train being late, they will simply shug and advise you take the next one .. which may be the next day.
