Try from Venice to Milan, Milan to Nice, Nice to Bordeaux, Bordeaux to 
Bayonne, Bayonne to Saint-Jean-Pied-de-Port.

The other option is as you said, Venice to Paris, Paris to Bayonne, Bayonne 
to Saint-Jean-Pied-de-Port.

Both routes offer fast trains through Bayonne. Paris can be rather a hassle, 
and the south is quite lovely. Perhaps stop in Avigon or Carcassonne along 
the way.
