There are several trains from Paris to Bayonne, it will vary by the day of 
the week, sometimes by the phase of the moon. Here is today, Monday, four

The http://www.tgv.com site has been uncooperative for a while, but go to 
http://www.sncf.com and pick the English flag to continue. On the 'voyages' 
site (above) you may pick your train, and the please note the transfer 
stations. Some switch to the TER system in the south, before Bayonne.

For the final from Bayonne to Saint Jean Pied de Port, please go to 
http://www.ter-sncf.com/aquitaine/default_uk.asp and fill in the blanks with 
'Bayonne' and 'Saint Jean Pied de Port'.
