Much of the southern part ot the Via de la Plata may not be desert but in
summer is very dry land with few villages and fountains some distance
apart. Your desert experience is valid.  I would not take less than 3
litres on a hot day.  April may be cooler but if the weather looks hot
carry plenty of water.

Out here, in the desert, a gallon a day per person is the rule of thumb.
This cuts the amount of backpacking one can do. I just walked 9 miles,
starting with this amount of water. It is purest torture. A gallon is 8
pounds.
