Ali -

It's not clear if you're planning to do the whole Camino on a bike or plan
to walk it and want to bike just a section of it.  If the former, one option
to consider is that used by Jean Seeler and her husband on two Caminos:

"When we went we bought mountain bikes in Walmart, unassembled and in their
boxes.  Bikes have to be in boxes to get them on the airplane and they count
as one of your two pieces of luggage.  We buy the largest suitcse we can
find to pack the luage racks, helmets, panniers and our clothing, You are
not going to go fast enough to justify taking your own very good bike (we
think.)   At the end of the trip we give our bikes to two local kids, pack
our stuff in cardboard boxes and come home looking like refugees.  "
