What comes first, the Cathedral, or the Pilgrims' Office?

Hi friends,

At pilgrim masses I attended at Santiago's Cathedral (emotional even for non-pilgrims), lists of countries representing the pilgrims that had arrived to Santiago on those particular dates (so said the priests from the pulpit), were read.

Now, I guess that the only way this info could have been obtained was by pilgrims going to the Pilgrims Office first, and then to the Pilgrims' noon mass.

The other alternative is that the lists may have been gathered the previous days to those masses, but I remember them refering to "today's countries..."

Yep, this is a minor technicality. But am I'm still curious.

I'd like to hear from anyone who could shed some light on this mystery.
