Maura,

I found this site which details the system of  European Long-Distance Paths.
The E2 path starts from Rome and continues into northern Italy where it
connects with the E7 path which uses the GR51 and the GR6 to cross southern
France.  That would take you to the start of the Arles route.  You should be
able to get more information by contacting the various hiking associations
listed for each section.
