Dear Maura,
I am not familiar with any formal guides for Compostela Pilgrims in Italy,
but I can recommend the wonderful account of  his Camino in the 1600's by
Domenico Laffi
Who traveled from Bologna to Santiago. He made the journey three times in
his life.  An excellent edition, with maps and notes, is available in
English:
