A suggestion for Eight days only based on your desire to walk SJPP to
Roncesvalles and last 100km at 40km per day in all conditions on all
terrain:
2 days SJPP to Pamplona 67km
2 days Burgos to Carrion de los Condes 84km (the meseta walking the camino
without it is not the same)
4 days Astorga to Samos 134km(two great mountain passes)
3 days Samos to Santiago 127km
This takes no account of the problems of getting from one place to another.
The idea of walking as far as you wish finishing in Santiago in one stretch
is probably more sensible.
