Route questions - Ponferrada to Santiago

What did you find most enjoyable along the way to Santiago?

Are there very long stretches before the trail next meets the road?  The
reason I ask that is that with seven of us and some luggage, we are going to
need to have someone drive a van with bags up to a hotel up ahead.  But then
there is the question of how they could rejoin the walking group if they
come back by bus.
