Hitch-hiking in Spain?

I second Brian's comments.  I lived in Madrid for a couple of year (though I
didn't have a car and never drove), and I think it would be a major headache
just trying to get positioned on the right road to Pamplona.   You would
probably have to figure out local buses to do that.  It would be much easier
simply to catch the bus running from the airport to Plaza de Colon.  This
bus stops immediately in front of the international arrivals terminal, and
it passes by the Avenida de America metro station, in which the bus station
is located with lines running to Pamplona.  Get off here, enter the metro
station and you will find signs pointing to the bus station, which is in one
of the undergroound levels.  From there you can catch a bus directly to
Pamplona.  As Brian mentioned, the buses are frequent, so you probably won't
have to wait more than an hour or so.  And the trip doesn't take much longer
than it does by car ( that is, if the car driver isn't driving at a
break-neck speed).
