This is the same question that I asked last year before my wife & I started
our pilgrimage.  The replies were that there were sufficient facilities
along the camino.  We didn't have any problems as we just stopped at the
local bars, coffee houses or restaurants, used their facilities and had a
glass of beer, cup of coffee or offered to pay for the use of the bathroom.
We were never charged, even if we didn't order something and they were
available in the smallest towns.  Just watch for churches, bars, museums,
super mercados and restaurants, all of which usually have bathrooms. My wife
never had a problem and she carried a two liter Camelback and probably drank
three or four liters of liquid on the camino.  That doesn't count the beer,
wine and coffee when we were at the refugios for the night.  Just watch for
the bathrooms and use them as available.  Outside the cities there are lots
of bushes to hide behind. :^)
