I say:

Gite d'etapes are the French version of refugios. They usually take
reservations and have full cooking facilities including all the dishes
and utensils.

Don't worry too much about packing too heavily/too lightly. As I did,
you can always mail stuff home, give stuff away or, as many did, mail
stuff ahead to yourself in Santiago. No matter how light you pack, you
will still find things to get rid of. On the other hand, if you forgot
something you think you really need, you can usually find and buy it en
route. Good Luck.
