I walked the Camino twice in the Mephisto goretex ankle-high boots and LOVED
them. Other people had wet feet because of the rain, but my feet were dry
(except once, in a driving downpour that funneled water to my ankles--next
time, I'll bring some gaiters). Higher boots provide more ankle support I'm
told, but the lower boots were absolutely fine for me. Cooler, as well.
