You'll need to put your bag in a box which you can purchase at any post office in Spain. (There is one at the Barajas airport in Madrid). The box comes with its own tape, etc., and you can pack it right at the post office.
Address the box to: (your name)
Lista de Correos
Santiago de Compostela
15780
Corunha, Espana
The Spain post offices now have a special (cute) label which marks the package
"Peregrino" (pilgrim) and which they put on the box if you tell them you are a pilgrim.
Caveat: the post office workers in Spain do not speak English; if you do not speak Spanish, a simple translator or dictionary will suffice for the purpose.
Mailing packages in Spain is SURPRISINGLY inexpensive and safe, and the post office in Santiago is right by the Pilgrims' office.
Buen Camino!
