Camino...w/ baby--help/ideas?!

I salute your fortitude, but I have to agree with Peter on this one...no matter how tough the baby is, (or the Mom for that matter!) the Camino really is not conducive to happy babies. I can think of no stretch of Camino that meets all the requirements you list. I think you both would wind up miserable.
