Karina,
   Last fall, after walking from St. Jean Pied de Port, I didn't want to
leave the Camino so I walked back to SJPP.  It's not all that hard, just
look over your shoulder from time to time to see where the arrows point and
therefore where you should walk away from.  I don't know about starting in
Santiago but it was an excellent experience going back over where I'd walked
on the way to Santiago.  An interesting part was meeting pilgrims on their
way to Santiago... many questions, much excitement and anticipation.    It
was well worth walking that direction.
