Trekking poles

Definitely one, especially if it gets wet and/or slippery.

They have incredible value as hiking pole, a staff to ward of stray dogs, heard Galician cattle, leg split (hopefully not) . . . 

Personally I walk too fast with two - a past history of cross country skiing catches up with me but each to their own.
