One book I found particularly inciteful  and wondrous to read was:

The Art of the Pilgrimage
The Seeker's Guide to making Travel Sacred
Phil Cousineau

Although this book does deal with other places that the Camino, it has a
beautiful sensitivity that I feel anyone making the Camino should know.

And, on a more historical note (and a bit esoteric) is

The Miracles of Saint James
Linda Davidson and MaryJane Dunn
lots of good history and backgound- fascinating
