If you want to start in Paris the Confraternity of St Jame has information.

If you want to start in St jean take the TGV ( French high speed train)
from the Gare Montparnasse to Bayonne...about 4 hours...maybe 5   I forget
You can overight there or take a train ( or even a taxi) the next day to St
Jean.
