I actually found a Raleigh - London fare of  $501., which is good because I
will actually be leaving from London (after walking Cantebury), and don't
mind getting to St. Jean from London, as I intended to visit Notre Dame and
several other French cathedrals before I start walking.

I will definately look into Iberia, though.
