There is a described, in one or two books, ancient route starting from
Le Puy-en-Velay to St. Jean Pied de Port. The books have all the
information about the route, cultural, geological, about campsites, hotels
and very detailed maps. This route, longdist.path, is titled:
Sentier de Saint-Jacques-de-Compostelle
subtitle: GR 65

You can buy it as one book or as two.

With these books you can start everywhere on this path,
starting in Le Puy, or halveway in Cahors or even further
at Condom etc.

I don't know if there is a description of the route from Arles to Somport
